Segoe UI; \* \*Default Paragraph Font; \*Hyperlink; \*Normal Table; \* What You’âll be Up To: •â Provide an epic experience for our guests at all times •â Directs, coaches, supports, supervises and evaluates the performance of direct reports •â Responsible for general maintenance of restaurant, reporting, repairs or replacements •â Designates specific responsibilities to the Assistant Restaurant Manager •â Assigns work schedules, time off and other duties to all restaurant personnel •â Orders, manages and controls the inventory of all equipment as deemed necessary for the daily operation of their restaurant •â Supervises and assists the Assistant Restaurant Manager to maintain a high level of service •â Has a thorough understanding of Time and Attendance procedures, shipboard training and is familiar with contracts and work schedules and supporting documentation •â Maintain complete knowledge of all menu items, cooking methods and beverage selections available in their assigned outlet •â Maintain complete knowledge of table/seat/station numbers, proper table set ups, room capacity, hours of operation, menus, price range and dress code of assigned restaurant and/or outlet •â Responsible for the smooth and efficient running of the respective restaurant to which they are assigned including necessary administrative tasks •â Visits each table of their respective restaurant and/or outlet engaging with and receiving feedback regarding the food and service ensuring sailors have the utmost satisfaction •â Ensures all restaurant team members perform and adhere to company guidelines and policies at all times •â Ensures that all restaurant products, equipment and cleaning materials are used in a cost-effective manner •â Informs the Restaurant Operations Manager on all Sailor issues, special requests, suggestions and complaints and where possible, seeks to resolve •â Ensures that Pre-shifts and menu tastings are carried out before each meal according to JOB DESCRIPTION company standard •â Conducts regular inspections of restaurant and outlet areas assigned to ensure proper organization, cleanliness and maintenance •â Ensures that all health rules and regulations such as USPH are maintained and adhered to and where necessary provides training to other members of the restaurant team •â Monitors clear down routines after service and ensures the appearance and condition of all items including cutlery and tableware meet Virgin Voyages’â standards •â Is familiar with all cruise services/features and activations to respond to Sailor’âs inquiries accurately •â Ensures compliance with the Company alcohol policy and notifies Restaurant Operations Manager if Sailors/Crew are in danger of breaching •â Ensures cost containment through the use of records, reports, supplies and equipment •â Identifies potential expense reductions through cost control •â Analyzes operational problems and establishes controls •â Reviews timesheets and forwards to the Food & Beverage Director for approval •â Prepares reports and letters utilizing personal computer system and equipment
